Ashok Patre, the third generation to work the land alongside his wife, Divya, is committed to ensuring the future of the farm by making it one of the most impressive operations we have seen in the coffee-producing world, not just in India.

Mr. Patre's processing methods are intentional and impressive. He understands that Indian terroir and varieties can only produce specialty coffee of a particular character and quality. Consequently, he has developed processing methods that manipulate the flavors of the final product to create something unique and exceptional. This approach to coffee processing can sometimes lead to "over-processed" or unclean-tasting coffees, but many of Mr. Patre's coffees are remarkably clean, complex, and interesting. Through tireless research and the careful application of scientifically proven techniques, Mr. Patre is able to
control fermentations in such a way as to create truly delicious coffees. We feel honored to have the opportunity to work with Ratnagiri Estate and to share this coffee with you.

Tasting Notes: Berries, Rock Candy & Lime

☕ Why You’ll Love It

Origin – Ethiopia.

Region – Guji.

Coffee – Shoondhisa.

Flavor Profile – Berries, Rock Candy & Lime.

Roast Level – Light & Bright.

Varietal – Gibirinna 74110 & Serto 74112.

Processing – Natural process.

Elevation – 2,000 MASL.

Fresh-Roasted to Order – Roasted in small batches for freshness and flavor.

No Artificial Flavors – Those berry, candy-like, and citrus notes come naturally from the coffee.

Available Size – 10 oz.

Free Shipping – On orders over $40 sitewide.

Nestled in the hills of Shakiso, Guji, the Suke drying station has been a cornerstone of Sookoo Coffee since its establishment in 2017. For five years—before the construction of the Sawana drying station and the Weessi washing station—Suke served as the beating heart of the operation.

Today, Suke buys cherries from approximately 35 smallholder farmers to produce Shoondhisa. Unlike in much of Latin America, where coffee is often grown on large estates with thousands of trees, most Ethiopian farmers cultivate small plots. It is not uncommon for coffee to come from home gardens, intercropped with subsistence crops. While the average Ethiopian farm is 2.5 hectares—larger than the average farm in Colombia—the planting density is far lower. Coffee in Ethiopia is typically grown in fully or semi-forested systems, resulting in fewer trees per hectare and lower yields. The national average yield is an astonishingly modest 0.8 kilograms of cherry per tree per year. Compounding this, most Ethiopian producers lack the infrastructure and financial means to process and dry their own coffee. For them, centralized stations like Suke are essential. Having a trusted, high-integrity partner like Sookoo is a major advantage: farmers receive excellent prices and are treated with dignity and respect by Ture Waji and his team. All cherries delivered to Suke are organically produced, reflecting both tradition and ecological stewardship.
