One group we work with is Guaya’b Asociación Civil, a coffee cooperative in Huehuetenango.

The name “Guaya’b” means “mutual aid.”

The Washed Process: Clean Taste

Here’s how it works:

  1. Coffee cherries are picked when ripe
  2. The fruit is removed
  3. Beans are fermented for 12–48 hours
  4. They are washed clean
  5. Then dried in the sun

This process gives coffee a clean, bright flavor.
