At that moment I realized three thing – I didn’t know how those little plants did, I was glad they do and I was going to find out how…
What Is Caffeine?
Caffeine is a natural stimulant. A stimulant increases activity in the brain and nervous system, which is why caffeine can help you feel more awake and alert. This is of course, one of the most beloved traits of coffee.
Coffee and tea are the best-known sources, but caffeine is also naturally found in cacao beans, kola nuts, guarana, yerba maté, and several other plants. You may find it in a plant’s seeds, leaves, or fruit.
In non-natural sources of caffeine such as sodas, energy drinks, supplements and even medicine, the caffeine may come from a plant extract or may be produced for use as an added ingredient.
The FDA notes that your body handles naturally occurring and added caffeine in the same general way.
Where Does Caffeine in Coffee Come From?
The caffeine in coffee comes from the coffee plant, specifically, the cherries.
Coffee grows on shrubs or small trees that produce fruit called coffee cherries. Inside each cherry are usually two seeds. Those seeds are what we call coffee beans.
The coffee plant makes caffeine through a series of natural chemical steps. Plant enzymes turn basic compounds into the caffeine molecule. The important part is simple: the plant builds caffeine on its own.
No roaster adds it. No brewer creates it. It is already part of the seed before the coffee leaves the farm.
This is one more reason origin matters. Every cup begins with agriculture, the farms and farmers where the coffee was grown. The variety of the plant, growing conditions, soil, climate, processing method, and care of the producer all help shape the coffee that reaches your mug.
The caffeine in your cup begins inside a coffee plant—but the flavor comes from the bean, the farm, and the care taken along the way.

Why Do Coffee Plants Make Caffeine?
Coffee plants make caffeine because they have Monday mornings too. There’s no evidence to support that claim, so let’s look at what really happens.
Caffeine appears to serve several jobs in nature.
Caffeine May Help Protect the Plant
Caffeine has a naturally bitter taste. In some parts of the coffee plant, it may help discourage insects or other animals from eating tender leaves and seeds.
If we think back to middle school science class, we know that plants cannot run away from something that’s trying to eat it. So, in the absence of legs, the plant instead produces compounds that can make it less inviting to certain pests.
Research has found that caffeine can be toxic to some insects and may act as part of a plant’s defense against being eaten. Some insects that live around coffee plants have even developed ways to tolerate or break down caffeine.
Caffeine May Help Flowers Be Remembered
Here is where the story gets especially interesting.
Coffee flowers can contain small amounts of caffeine in their nectar. In one study, honeybees given caffeine with a sugar reward were more likely to remember a flower’s scent.
That stronger memory could encourage pollinators to return to the same type of flower.
Caffeine may help protect parts of the plant while also helping pollinators remember its flowers.
Is Caffeine Added During Coffee Roasting?
No. Roasting does not add caffeine to coffee.
Green coffee seeds already contain caffeine when they arrive at a roast house. Roasting uses heat to develop the aromas, sweetness, acidity, body, and natural tasting notes hidden inside those seeds. Great roasting, like what James does, helps bring out all the notes and flavors already within the green beans. Nothing acritical added by us, just good beans and good roasting.
During roasting, beans lose moisture, expand (think like popcorn popping), change color, and develop flavor. Caffeine is stable, although roasting conditions can cause some changes in its final amount.
In everyday brewing, light, medium, and dark roasts are usually more similar in caffeine than people expect.
A dark roast may taste “stronger” because it has deeper, bolder roast flavors. However, bolder flavors does not mean more caffeine.
How you measure your coffee can also change the comparison.
Light roast beans are usually denser. Dark roast beans are larger and lighter because they lose more moisture during roasting. Measuring your coffee with a scoop may create a slightly different result than measuring it with a kitchen scale.
The simple takeaway is this:
Choose your roast mainly for the flavor you enjoy—not because you expect a huge difference in caffeine.
How Does Caffeine Get into Your Cup?
Caffeine dissolves in water.
When hot water touches ground coffee, it begins pulling soluble compounds from the grounds. This process is called extraction.
The water collects caffeine along with acids, sugars, oils, and hundreds of flavors and aroma compounds. The brewed liquid then passes through a filter or stays in contact with the grounds, depending on your brewing method.
Several factors affect how much caffeine reaches your cup.

Amount of Coffee
Perhaps the most obvious is the amount of coffee used. More ground coffee usually means more caffeine is available to enter the water.
A strong recipe made with a larger dose of coffee will normally contain more caffeine than a weaker recipe made with fewer grounds.
Serving Size
A larger drink may contain more total caffeine simply because there is more coffee in the cup.
This is why a large drip coffee may contain more total caffeine than a small espresso, even though espresso is more concentrated ounce for ounce.
Type of Coffee Bean
Coffee species can contain different amounts of caffeine.
Coffea canephora, commonly called robusta, generally contains more caffeine than Coffea arabica. Arabica coffee is often valued for its sweetness, balance, and more complex tasting notes. At Philly Fairtrade, we use Arabica beans.
Brewing Method
Espresso is concentrated, but it is usually served in a small amount.
Drip coffee is less concentrated per ounce, but the normal serving is often much larger. Cold brew can vary widely based on the recipe and whether it is served straight or as a concentrate.
Your dose, grind, water, brewing time, and final serving size all matter.
This is why caffeine numbers should be treated as helpful estimates rather than perfect promises.
What Other Plants Naturally Contain Caffeine?
Coffee may be the star of your morning, but caffeine appears naturally in several plants.
Tea leaves, cacao beans, guarana seeds, kola nuts, and yerba maté all contain caffeine. Guayusa and yaupon holly are two more naturally caffeinated plants.
The amount in the finished food or drink depends on several factors, including:
- The type of plant
- The part of the plant used
- The amount used
- The serving size
- How the product is prepared
Chocolate, for example, usually contains less caffeine per serving than brewed coffee. Guarana extracts may be very caffeine-rich and are sometimes added to energy drinks or supplements.
The plant source may change, but the caffeine molecule is still caffeine.

Is Natural Caffeine Different from Added Caffeine?
From your body’s point of view, caffeine is caffeine.
A cup of coffee contains caffeine naturally within a larger mixture of plant compounds. An energy drink may contain caffeine extracted from a plant or caffeine produced for use as an ingredient.
The caffeine molecules can act the same either way, but the complete products may be very different.
Plain brewed coffee is mostly water and compounds extracted from roasted coffee. Energy drinks and sodas may also include:
- Added sugar
- Sweeteners
- Artificial flavors
- Herbal extracts
- Vitamins
- Other stimulants
Serving sizes and caffeine levels can also vary widely.
Read the complete label rather than relying only on the word “natural.” Check the caffeine amount, serving size, sugar, and other ingredients.

Where Does Decaf Coffee Come From?
Decaf coffee comes from coffee plants too.
It is not a fake coffee bean or a naturally caffeine-free roast. Decaf begins as regular green coffee containing naturally produced caffeine.
Most of that caffeine is then removed before the beans are roasted (our decaf beans utilize the Swiss Water Process & Mountain Water process rather than harsh chemicals).
Different decaffeination methods may use water, carbon dioxide, or approved solvents to separate caffeine from green coffee. Water-based methods use caffeine’s ability to dissolve in water, along with filtering steps, to remove it from the beans.
Decaf is not always completely caffeine-free. It normally contains a small amount, but far less than regular coffee.
The decaffeination process typically removes about 97% or more of the coffee’s original caffeine.
Half-caf coffee follows the same basic idea. It blends regular and decaffeinated coffee beans to create a middle option.
You still get the familiar aroma, flavor, warmth, and coffee ritual—just with a gentler caffeine level.
Does Organic Coffee Have More or Less Caffeine?
Organic certification does not mean a coffee is naturally higher or lower in caffeine.
Caffeine levels are influenced more by factors such as:
- Coffee species and variety
- Plant genetics
- Growing conditions
- Processing
- Brewing recipe
- Amount of coffee used
- Serving size
“Organic” describes how an agricultural product is grown and handled under organic standards and growing. Organic and Fairtrade are not related to caffeine levels.

How Much Caffeine Is Too Much?
We all process caffeine differently due to body size, medications, health conditions, pregnancy, sleep, tolerance, and personal sensitivity can all change how someone responds.
One person may feel great after two cups. Someone else may feel shaky after half a mug.
The FDA says that up to 400 milligrams of caffeine per day is not generally associated with negative effects for most adults. That is a broad guide—not a target everyone needs to reach.
Pay attention to how you feel. Signs that you may be getting too much caffeine can include:
- Poor sleep
- Nervousness
- Feeling shaky
- A racing heartbeat
- Headaches
- Stomach discomfort
Pure or highly concentrated caffeine powders and liquids are very different from a normal cup of coffee and can be dangerous.
The FDA warns that one teaspoon of pure powdered caffeine may contain about as much caffeine as 28 cups of coffee.
A measured mug gives you flavor, aroma, water, and a familiar serving size—not a spoonful of concentrated stimulant.
