This coffee comes from Aproccor, a certified Fair Trade and Organic association in Copán, Western Honduras. Aproccor takes a holistic approach to coffee production, focusing on improving the community by empowering members economically, supporting youth education, and protecting the environment.

Through initiatives like improved processing standards and the construction of solar dryers, Aproccor has achieved high quality standards. They also invest in crop diversification to ensure food security and provide alternative income sources for producers.

Each member carefully picks ripe cherries, which are then floated in water to remove lower-density beans, hand-sorted, de-pulped at a centralized wet mill, fermented, and washed. Drying takes place on shaded raised beds, allowing for gentle airflow and consistent drying while protecting the coffee from excessive heat.
