🌱 The Story Behind the Bean

This coffee is produced by Café Sierra Azul, a cooperative of about 200 smallholder farmers in Chiapas, southern Mexico. Nestled within the breathtaking El Triunfo Biosphere Reserve, the cooperative benefits from rich biodiversity, healthy ecological symbiosis, and optimal conditions for specialty coffee.

Founded in 2010, Café Sierra Azul is dedicated to improving livelihoods while striving for coffee excellence. The cooperative has created market partnerships that stabilize incomes and empower member families. The name Sierra Azul, meaning “Blue Mountains,” reflects the striking bluish hue of the surrounding peaks.

Each member maintains an individual wet mill on their farm, following strict quality protocols. Ripe cherries are carefully picked, floated in water to remove defects, hand-sorted, de-pulped, fermented, washed, and finally dried on raised shaded beds. This meticulous process results in a Vienna Roast coffee with a well-rounded profile, highlighted by notes of pink grapefruit and milk chocolate.
