Our Half-Caf Mexico coffee is grown in the Chiapas region of southern Mexico. This region, with its rugged mountains and rainforest landscapes, produces nearly 60% of Mexico’s coffee and is also known for cacao cultivation. Farmers here often rely on coffee as a primary source of income, working small family farms at altitudes above 4,000 feet—in the same mountain range as Guatemala’s famed Huehuetenango region.

To create this half-caf offering, beans are decaffeinated using the Mountain Water Process, a clean, chemical-free method that preserves flavor while removing much of the caffeine. The result is a coffee that maintains the rich, satisfying character of Chiapas while offering a gentler caffeine experience.
