Coffee Beans from Mexico: Flavor, Farms & Fairtrade

There’s something special about coffee beans from Mexico.

Maybe it’s the mountain air.
Maybe it’s the careful hands that pick each ripe cherry.
Maybe it’s the simple truth that great coffee starts long before it ever reaches your mug.

At Philly Fair Trade Roasters, we believe every cup should taste amazing, support farmers, and help us steward the world around us. That’s why we’re proud to offer Organic, Fairtrade coffee beans from Mexico—grown by real families, roasted with care, and crafted to help you start your day on the right note.  Or help your day keep going in a good direction; this coffee is good anytime.  Except when trying to sleep soon.  Give our Decaf Mexico a try for that.  Best of both worlds.

Because it’s a good day to have a good day. ☕☀️

Why Coffee Beans from Mexico Stand Out

After a few sips, its easy to see why our Mexico coffee beans consistently rank as one of our best sellers.

Mexico’s southern region of Chiapas offers:

  • High elevations
  • Rich volcanic soil
  • Consistent rainfall
  • Biodiversity-rich ecosystems

These conditions create coffees that are:

  • Balanced
  • Bright but smooth

Mexican coffees are known for their easy-drinking character. They don’t shout—they invite. Invite you to start your day right, take a moment for yourself and be part of the journey these beans take and be part of the community they build.

Chiapas, Mexico

Our Coffee Beans from Mexico: Café Sierra Azul

Our Mexico coffee is produced by Café Sierra Azul, a cooperative of approximately 200 smallholder farmers in Chiapas, southern Mexico.

Their farms are nestled within the breathtaking El Triunfo Biosphere Reserve, a region known for:

  • Incredible biodiversity
  • Healthy ecological symbiosis (a science class way of saying things work together)
  • Ideal specialty coffee conditions

The name Sierra Azul means “Blue Mountains,” inspired by the bluish hue of the surrounding peaks. And when you brew these coffee beans from Mexico, you can almost feel that mountain air in the cup.

Founded with Purpose

Established in 2010, Café Sierra Azul was created to:

  • Improve farmer livelihoods
  • Stabilize income through market partnerships
  • Elevate quality standards
  • Build long-term sustainability

This isn’t anonymous commodity coffee.
This is community-built coffee.

A community you get to be a part of.

What Makes These Coffee Beans from Mexico Special?

1. Individual Wet Mills on Each Farm

Each member of the cooperative maintains an individual wet mill on their farm.

That means:

  • Greater control over quality
  • Immediate processing after harvest
  • Strict adherence to quality protocols

When cherries are picked, they don’t sit around. They move directly into careful processing steps that protect flavor and integrity.

2. Meticulous Processing

The process looks like this:

Ripe cherries are carefully hand-picked

Floated in water to remove defects

Hand sorted for quality

De-pulped

Fermented

Washed Clean

Dried on raised, shaded beds

Shade drying slows the process naturally, which enhances clarity and sweetness.

    Nothing rushed.
    Nothing artificial.
    Just careful craftsmanship.

Organic Coffee Beans from Mexico: Why It Matters

All of our coffee beans from Mexico (this includes our regular Mexico, Decaf Mexico and Half-Caf Mexico) are Certified Organic.

    That means:

    • No synthetic pesticides
    • Healthier soil systems
    • Safer environments for farming families

Organic farming supports long-term ecological balance. In a region as biodiverse as El Triunfo, that’s especially important.

Healthy soil → healthier coffee trees → better flavor in your cup.

    It’s simple.
    And it works.
