The Story Behind the Beans



Finca Los Angeles is a 16-hectare farm in El Salvador founded in 2017 by Los Naranjos Coffee. The farm was established after a natural disaster devastated much of the surrounding community, becoming part of the region's rebuilding efforts while striving to produce some of the country's finest coffees.

That dedication quickly paid off. In 2020, Finca Los Angeles entered its first Cup of Excellence competition and earned an impressive 5th-place finish, gaining recognition from specialty coffee buyers across Europe, including Holland, France, and the United Kingdom.

One of the farm's defining features is its nearly level terrain, planted almost entirely with young Pacamara trees. The team continuously studies their soil to understand exactly what the coffee plants need, applying fertilizer only where necessary based on detailed soil analysis. Weed control is handled manually using traditional tools like machetes instead of chemical herbicides, helping preserve both the farm and the surrounding environment.

Environmental stewardship is woven throughout the operation. Soil conservation projects, water collection pits, and groundwater protection practices help ensure the land remains healthy for generations of coffee growers to come.

🔬 Crafted Through Precision Anaerobic Processing

Producing a clean Anaerobic Natural coffee requires careful attention to every detail.

Fresh coffee cherries are placed into specialized fermentation tanks equipped with degassing systems and drain valves, allowing the team to constantly monitor both pH and sugar development throughout fermentation. Over 72 hours, the coffee is carefully observed until the pH reaches approximately 4.05, creating complexity without developing unwanted alcoholic or overly fermented flavors.

After fermentation, the coffee is pre-dried for three days before moving onto raised drying beds. Located between El Pilón and El Aguila mountains at approximately 1,400 meters above sea level, the mill's cooler mountain climate allows for slow, even drying over 30–40 days. This extended drying process helps produce a cleaner cup, exceptional consistency, and excellent storage stability.

Before storage, each lot is carefully tested to ensure it reaches 10% moisture content, giving every batch the best opportunity to maintain its outstanding quality until it's roasted fresh for your order.
