The Story Behind the Beans



Edison Elías Muñoz has been growing coffee for over 30 years in the renowned coffee-growing region of San Agustín, Huila—one of Colombia’s southernmost and most respected producing areas.

His farm, Finca Pensilvania, spans seven hectares of fully producing coffee planted at high elevation. Each hectare contains approximately 2,200–2,400 trees, and Edison grows several rare and heirloom varieties including Java, Laurina, Sudan Rume, and this exceptional Geisha offering.

Beyond coffee, Edison and his family also cultivate plantains and run their farm with deep community involvement. They employ:

Processing Details

This Geisha undergoes a meticulous double-fermentation washed process designed to unlock clarity and complexity:

Whole-cherry fermentation in barrels for 48 hours

De-pulping, followed by a second fermentation in tanks for 36 hours

Thorough washing and rinsing before drying

This method enhances aromatics, refines acidity, and results in a clean, expressive cup.
