El Santuario is an association of coffee growers situated in northern Peru’s national sanctuary, Tabaconas Namballe. The group was founded by 30 producers in 2017. They selected the name Sanctuario, meaning Sanctuary, to pay homage to the regions nature reserve by honoring the natural beauty and ecological importance of the region they call home From the beginning, El Santuario has been driven by a mission: to uplift the livelihoods of coffee-growing families while preserving the delicate balance of their surrounding environment. This ethos of environmental stewardship and social empowerment continues to guide their journey. Over the years, El Santuario has flourished, growing its membership while staying true to its core values. Remarkably, one-third of the producers are women, reflecting the association's commitment to inclusivity and fostering leadership among all members of the community. El Santuario isn’t just about producing exceptional coffee— it’s about cultivating a future where people, nature, and coffee thrive together.
Each member of Santuario has an individual wet mill on his/her own farm. As an organization, they have protocols and parameters in place to ensure that the coffee cherries being picked are at optimal maturity. Once the cherries are picked, they are floated in water to remove the lower-density cherries, and then they are hand sorted. The cherries are then de-pulped at each farm, fermented in tanks, and washed before they are finally dried on raised beds mostly in the shade. By slowly drying on raised beds, the coffee benefits from having continuous, delicate airflow. By mostly avoiding direct sunlight, the coffee is protected from being damaged by excessively hot temperatures. This dedicated approach guarantees a high-quality coffee that tells the story of its careful journey from farm to cup.
