🌱 The Story Behind the Bean

This light roasted coffee comes to us from the Mahonda Washing Station in the Gitega region of Burundi. Named for the district in which it resides, the Mahonda Washing Station was created by Sogestal Kirimiro. “Sogestals” were management boards made up of private owners and government representatives overseeing washing station operations. In 2020, most of these stations, including Mahonda, were taken under control of the government body ODECA.

Gitega’s cooler climate and lower rainfall cause cherries to mature more slowly, developing complex flavors. At 1,932 masl, Mahonda operates at a higher altitude than most stations in Burundi and receives cherries from 13 surrounding hills. Around 144 smallholder producers—typically farming less than 1 hectare—deliver their cherries here. After harvest, cherries are floated, washed, fermented for 18–24 hours, and dried on raised beds for 15–20 days before export.
