What is the Best Temperature to Brew Coffee?

As a generalization, the best overall temperature to brew coffee is between 195-205 degrees Fahrenheit.  Now, this can vary a few degrees among different types of brewing, such as drip, pour over, French Press, and Espresso.  Cold brew of course, occurs at a different temp.  Time, individual preference and grind type can also change the temperature you prefer to brew at.  Nailing the right brew temperature can unlock all the wonderful tasting notes inside the beans.  Miss it, and you may be sipping a sour, bitter mug of sad bean water.  So, pour yourself a mug of coffee brewed at the right temperature and let’s begin our journey.  If you missed the temp and find yourself with a mug of sad bean water, you can always have some of these ready at a moment’s notice!

What are the steps to brewing coffee at the right temperature?

1. Heat Your Water to 195–205°F (9096°C)

  • Use a kettle with temperature control or bring water off boil (~30 seconds after), then measure.
  • Boil → cool → test water with a thermometer for accuracy.

2. Grind Accordingly

  • Match your grind to method:
    • Drip/Pour over: medium (sand-like, a beach vacation in your kitchen!). Learn more about making an awesome pour over here.
    • French Press: coarse (sea salt–like)
    • Espresso: fine (powdery)

3. Pour & Bloom

  • In pour-overs, pour a little water to bloom grounds for 30–45 seconds. Helps degassing and even extraction.  Blooming is another way of saying pour some water on the coffee grounds to help release the gases in the ground coffee without pouring all the water on to start.  A little water, water while the damp grounds settle, then pour some more.

4. Brew Time

  • Drip: ~4–5minutes
  • French Press: 4minutes steep + plunge
  • Espresso: 25–30seconds
  • AeroPress: 1–2minutes

Time + temperature = flavor control.

5. Taste & Adjust

  • Sour? Try 2°F hotter or grind finer.
  • Bitter? Lower temp or grind coarser.
  • Flat? Open grind or higher temp.
